Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large mixing bowl, beat butter, peanut butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy, about 2 minutes.
- Add egg and vanilla extract, mixing until fully incorporated.
- Gradually mix in dry ingredients until a dough forms. Stir in chocolate chips.
- Scoop tablespoon-sized portions of dough onto prepared baking sheet, spacing about 2 inches apart.
- Bake for 9–10 minutes, until edges are lightly golden but centers are still soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra chewy cookies, slightly underbake by 1 minute. Store in an airtight container for up to 5 days.
