Chocolate Strawberry Yogurt Clusters

These chocolate strawberry yogurt clusters are a refreshing frozen treat made with Greek yogurt, fresh strawberries, and a crunchy chocolate shell. A healthy yet indulgent snack perfect for summer!

Ingredients
  

  • 1 1/2 cups chopped strawberries
  • 1 cup plain Greek yogurt
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil

  • Baking sheet
  • Parchment paper
  • microwave-safe bowl

Method
 

  1. In a large bowl, mix together chopped strawberries, Greek yogurt, honey, and vanilla extract until well combined.
  2. Scoop about 2 tbsp of the mixture onto a parchment-lined baking sheet to form clusters. You should have about 10 clusters.
  3. Freeze clusters until completely solid, about 1–2 hours.
  4. Melt chocolate chips and coconut oil in a microwave-safe bowl in 15–30 second intervals, stirring between each, until smooth.
  5. Dip each frozen yogurt cluster into melted chocolate, coating thoroughly. Place back on the baking sheet. Add sea salt if desired.
  6. Return to the freezer for a few minutes until chocolate hardens. Enjoy frozen.

Notes

Swap strawberries for blueberries, raspberries, or even mango for variety. Use dark chocolate for a richer flavor or white chocolate for a sweeter twist. Store in the freezer and enjoy straight from frozen.
