  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 15.25 ounces yellow cake mix
  • 1/2 cup holiday sprinkles
  • 1/2 cup powdered sugar

Method
 

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat together the softened cream cheese, butter, egg, and vanilla extract with an electric mixer until smooth.
  3. Stir in the cake mix until a thick dough forms.
  4. Gently fold in the holiday sprinkles, being careful not to overmix so the colors do not bleed.
  5. Chill the dough for at least 30 minutes to make it easier to handle.
  6. Scoop the dough into 1½-inch balls and roll each in powdered sugar until fully coated.
  7. Place dough balls on the prepared baking sheets, about 2 inches apart, and bake for 10–12 minutes until the edges are set and the centers still look slightly soft.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra holiday flair, try using a mix of red, green, and white sprinkles. Avoid overbaking to maintain the soft, gooey centers.
