  • 1 cup unsalted butter, softened Room temperature
  • 1/2 cup powdered sugar Plus more for coating
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 cup finely ground coffee or espresso For a richer flavor
  • 1/2 cup finely chopped nuts (optional) Use almonds or walnuts

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and powdered sugar together until light and fluffy.
  3. Mix in the vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, coffee, and optional nuts.
  5. Gradually add the dry ingredients to the butter mixture, mixing just until combined.
  6. Roll tablespoon-sized portions of dough into balls and place them 2 inches apart on the baking sheet.
  7. Bake for 12–15 minutes until edges are firm but centers remain soft. Cool slightly on the baking sheet.
  8. While still warm, roll each cookie in powdered sugar to coat completely.
  9. Transfer to a wire rack and cool fully before serving.

Notes

For a stronger tiramisu flavor, use espresso powder instead of regular coffee. You may also double-coat the cookies with powdered sugar once cooled for an extra snowy look.
