Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a large bowl, combine the granulated sugar, brown sugar, and eggs. Beat until light and fluffy, then mix in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Cover the dough and refrigerate for 30 minutes.
- In a small bowl, combine granulated sugar and ground cinnamon to make the coating.
- Roll chilled dough into balls and coat fully in the cinnamon sugar mixture.
- Place cookie dough balls on the baking sheet, spacing them 2 inches apart, and bake for 10–12 minutes.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For extra cinnamon flavor, roll the dough twice in the coating mixture. Store cookies in an airtight container to keep them soft.
