Ingredients
  

Cookie Dough
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
Cinnamon Sugar Coating
  • 1/2 cup cinnamon sugar (for coating) mixed from granulated sugar + cinnamon

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, combine the granulated sugar, brown sugar, and eggs. Beat until light and fluffy, then mix in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Cover the dough and refrigerate for 30 minutes.
  6. In a small bowl, combine granulated sugar and ground cinnamon to make the coating.
  7. Roll chilled dough into balls and coat fully in the cinnamon sugar mixture.
  8. Place cookie dough balls on the baking sheet, spacing them 2 inches apart, and bake for 10–12 minutes.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For extra cinnamon flavor, roll the dough twice in the coating mixture. Store cookies in an airtight container to keep them soft.
