Method
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 3–4 minutes).
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together flour, baking powder, ground cinnamon, and salt. Gradually add this mixture to the wet ingredients until just combined.
- Using a cookie scoop or tablespoon, drop balls of dough onto prepared baking sheets about 2 inches apart.
- Bake for 10–12 minutes or until edges are golden brown; the centers should remain soft. Cool on baking sheets for a few minutes before transferring to wire racks.
- Dust with powdered sugar before serving.
Notes
Dust with powdered sugar after baking for that classic coffee cake look. For an extra treat, drizzle with a light vanilla glaze. Store in an airtight container for up to 5 days.
