  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter, softened
  • 1 large egg
  • 2 tsp vanilla extract
  • powdered sugar for dusting

Method
 

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 3–4 minutes).
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, ground cinnamon, and salt. Gradually add this mixture to the wet ingredients until just combined.
  5. Using a cookie scoop or tablespoon, drop balls of dough onto prepared baking sheets about 2 inches apart.
  6. Bake for 10–12 minutes or until edges are golden brown; the centers should remain soft. Cool on baking sheets for a few minutes before transferring to wire racks.
  7. Dust with powdered sugar before serving.

Notes

Dust with powdered sugar after baking for that classic coffee cake look. For an extra treat, drizzle with a light vanilla glaze. Store in an airtight container for up to 5 days.
