These Cinnamon Roll French Toast Roll-Ups combine the best of two breakfast favorites: gooey cinnamon rolls and golden French toast. With a sweet cream cheese icing drizzle, they’re crispy on the outside, soft inside, and absolutely irresistible for brunch or holiday mornings.

Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 2 tbsp unsalted butter, softened (for cooking)
  • 1/4 cup light brown sugar
  • 1 tbsp cinnamon
  • 8 slices thick, soft bread (crusts removed)
  • 2 eggs
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar
  • 1 tsp cinnamon (for coating)
  • 1-1/2 tbsp unsalted butter, softened (for icing)
  • 1/2 cup cream cheese, room temperature
  • 1/4 cup confectioners’ sugar

Method
 

  1. In a small bowl, mix together 1/2 cup softened butter, light brown sugar, and cinnamon until combined.
  2. Remove the crusts from the bread and use a rolling pin to flatten each slice into a thin sheet.
  3. Spread a thin layer of the cinnamon butter mixture evenly on each slice. Roll each piece tightly to form a log.
  4. In a medium bowl, whisk together the eggs, milk, and vanilla extract.
  5. Quickly dip each roll into the egg mixture, ensuring the entire roll is coated, but don’t soak it.
  6. Melt the remaining 2 tablespoons of butter in a skillet over medium heat. Fry the rolls, turning occasionally, until golden brown and crispy on all sides, about 2-3 minutes per side.
  7. Mix together the granulated sugar and cinnamon in a small bowl. Once the rolls are fried, immediately roll them in the cinnamon-sugar mixture to coat fully. Set aside on a serving plate.
  8. In a bowl, mix together the softened butter, cream cheese, and confectioners’ sugar until smooth and creamy. Transfer the icing to a piping bag for drizzling, or serve in a small dish as a dip.

Notes

Serve warm with extra cream cheese icing for dipping, or pair with fresh fruit for balance. These can be prepared ahead, stored in the fridge, and quickly reheated in a skillet or air fryer. For extra indulgence, drizzle with caramel or chocolate sauce.
