Ingredients
  

  • 1½ cups (190 g) all-purpose flour
  • ½ cup (100 g) granulated sugar
  • ¼ cup (50 g) brown sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup (115 g) unsalted butter, melted
  • ½ cup (120 ml) milk
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ cup cinnamon sugar (blend of cinnamon + granulated sugar)

Method
 

  1. Preheat the oven – Set to 375°F (190°C) and line a muffin tin with paper liners.
  2. Mix the dry ingredients – In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt until evenly combined.
  3. Combine wet ingredients – In a separate bowl, whisk melted butter, milk, egg, and vanilla until smooth.
  4. Bring it together – Pour the wet mixture into the dry ingredients. Stir gently until just combined—do not overmix.
  5. Fill the muffin tin – Divide the batter evenly among the muffin cups, filling each about ¾ full.
  6. Top with cinnamon sugar – Generously sprinkle the cinnamon sugar mixture over each muffin
  7. Bake – Place on the center rack and bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean
  8. Cool & enjoy – Let muffins rest in the pan for 5 minutes before transferring to a wire rack. Serve warm or at room temperature.

Notes

  • Always measure flour using the spoon-and-level method for accuracy.
  • Fresh cinnamon will give the best flavor.
