Ingredients
  

  • 15 oz ricotta cheese (whole milk or low-fat)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 cup mini chocolate chips
  • 1 (14 oz) package pre-made pie crusts
  • 1 egg, beaten
  • 1 tbsp sugar for sprinkling
  • optional pistachios, cherries, or extra chocolate chips for garnish

Method
 

  1. In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla, cinnamon, and mini chocolate chips until smooth.
  2. Preheat your oven to 375°F (190°C).
  3. Press one pie crust into a 9x9-inch baking dish.
  4. Spread the ricotta filling evenly over the crust.
  5. Place the second pie crust on top, seal edges, brush with beaten egg, and sprinkle with sugar.
  6. Bake for 30–35 minutes or until golden brown.
  7. Let cool for at least 30 minutes before cutting into squares.

Notes

For a richer texture, use whole-milk ricotta and drain excess liquid if needed. Cool completely before cutting for cleaner slices. Garnish with pistachios, cherries, or extra chocolate chips for added flavor.
