- In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla, cinnamon, and mini chocolate chips until smooth.
- Preheat your oven to 375°F (190°C).
- Press one pie crust into a 9x9-inch baking dish.
- Spread the ricotta filling evenly over the crust.
- Place the second pie crust on top, seal edges, brush with beaten egg, and sprinkle with sugar.
- Bake for 30–35 minutes or until golden brown.
- Let cool for at least 30 minutes before cutting into squares.
Notes
For a richer texture, use whole-milk ricotta and drain excess liquid if needed. Cool completely before cutting for cleaner slices. Garnish with pistachios, cherries, or extra chocolate chips for added flavor.
