Ingredients
  

  • 1 cup cottage cheese full-fat, blended until smooth
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup maple syrup or honey
  • 2 large eggs room temperature
  • 1/2 cup almond flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup mini dark chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  2. Blend cottage cheese until completely smooth.
  3. Add eggs, maple syrup, and vanilla to the blender and blend until combined.
  4. In a bowl, whisk together cocoa powder, almond flour, baking soda, and salt.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Stir in chocolate chips, if using. Let the batter rest for 10 minutes.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 25–30 minutes, until set but slightly fudgy in the center.
  9. Cool completely in the pan before slicing.

Notes

For extra fudginess, slightly underbake. Store brownies in the refrigerator for up to 4 days.
