Method
- Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
- Blend cottage cheese until completely smooth.
- Add eggs, maple syrup, and vanilla to the blender and blend until combined.
- In a bowl, whisk together cocoa powder, almond flour, baking soda, and salt.
- Fold the dry ingredients into the wet mixture until just combined.
- Stir in chocolate chips, if using. Let the batter rest for 10 minutes.
- Pour batter into prepared pan and smooth the top.
- Bake for 25–30 minutes, until set but slightly fudgy in the center.
- Cool completely in the pan before slicing.
Notes
For extra fudginess, slightly underbake. Store brownies in the refrigerator for up to 4 days.
