Ingredients
  

  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 2 tbsp (30ml) fresh orange juice
  • 1 tbsp finely grated orange zest (about 1 large orange)
  • 2.5 cups (300g) all-purpose flour
  • 0.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 1 cup (120g) dried cranberries, chopped
  • 0.5 cup (85g) optional: white chocolate chips
  • 0.5 cup (60g) optional: chopped pecans or walnuts
  • optional: simple orange glaze for drizzling after baking

Method
 

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats to prevent sticking and promote even baking.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2–3 minutes. This step incorporates air for a tender texture.
  3. Beat in the egg until fully combined. Mix in the fresh orange juice and orange zest, ensuring the zest is evenly distributed throughout the dough.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
  5. Gently stir in chopped dried cranberries. If using, fold in white chocolate chips and nuts.
  6. Scoop tablespoon-sized portions of dough, roll into balls, and place 2 inches apart on the prepared baking sheets.
  7. Bake for 10–12 minutes, or until edges are lightly golden but centers remain soft. Do not overbake.
  8. Cool on the baking sheet for 5 minutes, then transfer to a cooling rack. Drizzle with orange glaze if desired.

Notes

For extra sweetness, add white chocolate chips. Chopped pecans or walnuts bring a lovely crunch. To make them festive, drizzle with an orange glaze made from powdered sugar and orange juice once cooled. Store in an airtight container for up to 5 days.
