Ingredients
  

Cookie Crust
  • 1 pouch snickerdoodle cookie mix 1 lb 1.5 oz pouch
  • 1/2 cup butter softened, plus 1 tablespoon melted for crumble
Cream Cheese Filling
  • 8 oz cream cheese softened
  • 1/4 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 egg
Apple Layer
  • 1 1/4 cups apple pie filling chopped
  • 1/2 teaspoon ground cinnamon

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch glass pie plate.
  2. Place the cookie mix into a large bowl and cut in the softened butter using a pastry blender until crumbly.
  3. Press about 2 cups of the crumbs into the bottom and up the sides of the pie plate. Bake for 10 minutes, then set aside.
  4. Add 1 tablespoon melted butter to the remaining crumbs and toss to combine. Set aside for topping.
  5. In a medium bowl, beat the cream cheese until smooth. Add sugar and flour and mix well.
  6. Add vanilla and egg, beating until the mixture is smooth and creamy.
  7. In a small bowl, mix the chopped apple pie filling with cinnamon.
  8. Spread the cream cheese mixture evenly into the baked cookie crust.
  9. Spoon the apples over the cream cheese layer, using mostly apples and less gel.
  10. Sprinkle the crumble mixture evenly over the apples.
  11. Bake for about 35 minutes, or until the top is golden brown.
  12. Cool completely, then refrigerate for at least 3 hours before serving.

Notes

This pie slices best when fully chilled. Serve plain or with whipped cream or vanilla ice cream.
