Ingredients
  

  • 8 oz cream cheese, softened
  • 3/4 cup vegetable oil
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 1/2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 1/2 tsp salt
  • 1 1/4 cups buttermilk
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened (for frosting)
  • 2 tsp vanilla extract (for frosting)
  • 1/2 tsp salt (for frosting)
  • 4–5 cups powdered sugar

Method
 

  1. Preheat oven to 325°F (165°C). Grease a 9×13-inch baking dish.
  2. Beat cream cheese until smooth. Mix in oil and sugar until well combined.
  3. Add eggs one at a time, mixing well after each. Stir in vanilla.
  4. Whisk flour, baking powder, and salt in a separate bowl.
  5. Gradually mix dry ingredients into wet mixture, alternating with buttermilk.
  6. Pour batter into prepared pan and bake for 35–40 minutes until a toothpick comes out clean.
  7. Let cake cool completely before frosting.
  8. Beat butter and cream cheese until smooth. Add vanilla and salt, then gradually mix in powdered sugar.
  9. Frost the cooled cake and refrigerate for at least 30 minutes before serving.

Allow the cake to cool completely before frosting to prevent melting. Refrigerating before serving enhances the flavor and texture.
