Ingredients
  

  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts or thighs, cut into pieces
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 12 oz pasta (penne, rigatoni, or fettuccine)
  • 2 cloves garlic, minced
  • 5.2 oz Boursin cheese, Garlic & Herb
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tbsp fresh parsley, chopped

Method
 

  1. Season chicken with salt and pepper. Heat olive oil in a skillet and cook chicken until golden and fully cooked. Remove and set aside.
  2. Cook pasta in salted water until al dente. Reserve 1 cup pasta water, then drain.
  3. In the same skillet, sauté garlic until fragrant. Reduce heat and stir in Boursin cheese and heavy cream until smooth.
  4. Add chicken broth and stir to reach desired sauce consistency.
  5. Return chicken to skillet, add pasta, and toss to coat. Add reserved pasta water if needed.
  6. Serve hot, garnished with chopped parsley.

Notes

Reserve pasta water to loosen the sauce if needed. Spinach, sun-dried tomatoes, or mushrooms make excellent add-ins for extra flavor and texture.
