- Heat olive oil or butter in a large skillet over medium heat. Add smoked sausage slices and cook until lightly browned. Remove and set aside.
- In the same skillet, add diced onion and cook for 2–3 minutes until softened. Stir in garlic and cook another 30 seconds.
- Add potatoes, chicken broth, ranch seasoning, paprika, salt, and pepper. Stir well. Cover and simmer on medium-low for 15–20 minutes, stirring occasionally, until potatoes are fork-tender.
- Stir in heavy cream and return sausage to the skillet. Simmer for 5 minutes to combine flavors.
- Reduce heat to low and stir in cheddar and mozzarella until melted and creamy.
- Garnish with chopped parsley before serving.
Notes
For a lighter version, swap heavy cream with half-and-half and reduce cheese slightly. Try smoked paprika for extra depth, or substitute turkey sausage for a leaner option. Best enjoyed hot straight from the skillet.
