Creamy Cheesy Ranch Potatoes with Smoked Sausage Skillet

Ingredients
  

  • 1 lb smoked sausage, sliced into rounds
  • 2 lbs baby potatoes, quartered (Yukon gold or red)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 packet (1 oz) ranch seasoning mix
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp olive oil or butter
  • fresh parsley, chopped (for garnish)

Method
 

  1. Heat olive oil or butter in a large skillet over medium heat. Add smoked sausage slices and cook until lightly browned. Remove and set aside.
  2. In the same skillet, add diced onion and cook for 2–3 minutes until softened. Stir in garlic and cook another 30 seconds.
  3. Add potatoes, chicken broth, ranch seasoning, paprika, salt, and pepper. Stir well. Cover and simmer on medium-low for 15–20 minutes, stirring occasionally, until potatoes are fork-tender.
  4. Stir in heavy cream and return sausage to the skillet. Simmer for 5 minutes to combine flavors.
  5. Reduce heat to low and stir in cheddar and mozzarella until melted and creamy.
  6. Garnish with chopped parsley before serving.

Notes

For a lighter version, swap heavy cream with half-and-half and reduce cheese slightly. Try smoked paprika for extra depth, or substitute turkey sausage for a leaner option. Best enjoyed hot straight from the skillet.
