Ingredients
  

  • 2 tbsp olive oil
  • 1 1/2 lbs boneless, skinless chicken breasts, chopped into bite-sized pieces
  • 1 small yellow onion, thinly sliced
  • 1 can (10.5 oz) cream of chicken soup
  • 3/4 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup French-fried onions (plus extra for topping)
  • salt and black pepper, to taste

Method
 

  1. Preheat oven to 350°F (180°C). Grease a 9×13-inch casserole dish.
  2. Heat 1 tbsp olive oil in a skillet. Cook chicken with salt and pepper until browned and fully cooked. Remove and set aside.
  3. Add remaining olive oil to skillet. Sauté onions until soft and golden, about 5 minutes.
  4. In a large bowl, combine cooked chicken, onions, cream of chicken soup, milk, and shredded cheese. Mix well.
  5. Spread mixture into prepared casserole dish. Top with French-fried onions and extra cheese if desired.
  6. Bake for 25–30 minutes until hot, bubbly, and golden on top. Let cool slightly before serving.

Notes

Add broccoli florets, peas, or mushrooms for extra veggies. Swap cheddar for mozzarella or Monterey Jack for a melty twist. Make ahead and refrigerate, then bake just before serving.
