Ingredients
  

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp unsalted butter
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme

Method
 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the sweet potato cubes with olive oil, sea salt, black pepper, garlic powder, and smoked paprika. Toss to coat evenly.
  3. Spread the seasoned sweet potatoes onto the baking sheet in a single layer, leaving space between each piece.
  4. Bake for 25–30 minutes, flipping halfway through, until crispy and golden.
  5. In a small saucepan, melt the butter over medium heat. Add parsley, rosemary, and thyme. Cook 1–2 minutes until fragrant.
  6. Remove sweet potatoes from the oven and immediately sprinkle with Parmesan cheese.
  7. Drizzle herb butter over the hot sweet potato bites and toss gently to coat.
  8. Serve immediately as a side dish or snack.

Notes

For extra crispiness, avoid overcrowding the pan. You can also broil for 1–2 minutes at the end for more golden edges.
