- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the sweet potato cubes with olive oil, sea salt, black pepper, garlic powder, and smoked paprika. Toss to coat evenly.
- Spread the seasoned sweet potatoes onto the baking sheet in a single layer, leaving space between each piece.
- Bake for 25–30 minutes, flipping halfway through, until crispy and golden.
- In a small saucepan, melt the butter over medium heat. Add parsley, rosemary, and thyme. Cook 1–2 minutes until fragrant.
- Remove sweet potatoes from the oven and immediately sprinkle with Parmesan cheese.
- Drizzle herb butter over the hot sweet potato bites and toss gently to coat.
- Serve immediately as a side dish or snack.
Notes
For extra crispiness, avoid overcrowding the pan. You can also broil for 1–2 minutes at the end for more golden edges.
