Method
- Preheat oven to 425°F (220°C) and place a baking sheet inside to heat.
- Peel sweet potatoes if desired and cut into 1/4-inch fries.
- Soak fries in cold water for 30 minutes to remove excess starch.
- Drain and pat fries completely dry. Toss with olive oil, garlic powder, paprika, salt, and pepper. Add cornstarch if using and toss to coat.
- Remove hot baking sheet from oven and spread fries in a single layer without crowding.
- Bake 25–30 minutes, flipping halfway through, until golden and crispy.
- Let cool slightly before serving.
Notes
For best crispiness, avoid overcrowding the pan. Use two baking sheets if necessary.
