Ingredients
  

Casserole Base
  • 1 lb sourdough or French bread, cut into chunks
  • 8 large eggs
  • 2 cups milk whole or 2%
  • 1/2 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar unpacked
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 6-7 medium bananas, chopped
Streusel Topping
  • 3/4 cup all-purpose flour
  • 3/4 cup brown sugar firmly packed
  • 1 teaspoon ground cinnamon for streusel
  • 1/2 cup salted butter, cut into pieces for streusel

Method
 

  1. Grease a 9x13-inch baking dish. In a large bowl, whisk together eggs, milk, cream, granulated sugar, brown sugar, vanilla, and cinnamon until well combined.
  2. Add bread chunks and chopped bananas to the custard mixture. Gently toss until evenly coated.
  3. Transfer mixture to the prepared baking dish, spreading evenly.
  4. In a separate bowl, combine flour, brown sugar, and cinnamon. Cut in butter using a pastry cutter or fork until crumbly.
  5. Sprinkle streusel evenly over the casserole. Cover tightly and refrigerate overnight.
  6. Preheat oven to 350°F (175°C). Bake uncovered for 45–55 minutes until set in the center and golden brown on top.
  7. Allow to cool slightly before serving. Serve warm.

Notes

For extra indulgence, drizzle with maple syrup or dust with powdered sugar before serving. If baking immediately instead of overnight, allow the casserole to rest at least 30 minutes before baking to help the bread absorb the custard.
