Ingredients
  

Main Filling
  • 6 large eggs
  • 1 cup cooked chicken or turkey sausage, crumbled avoid pork sausage
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 2 medium green onions, chopped
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
  • 1 tablespoon butter or cooking oil for pan frying

Method
 

  1. In a mixing bowl, whisk the eggs with salt and black pepper until well combined. Set aside.
  2. Heat a skillet over medium heat and cook the crumbled chicken or turkey sausage until browned and fully heated.
  3. Add the whisked eggs and chopped green onions to the skillet. Stir gently until the eggs are fluffy and fully cooked.
  4. Lay out a tortilla on a flat surface. Spoon the sausage and egg mixture onto one side and sprinkle evenly with shredded cheddar cheese.
  5. Roll the tortilla tightly around the filling. Secure with toothpicks if necessary.
  6. In the same skillet, add butter or oil over medium heat. Place the roll-ups seam-side down and cook until golden brown on all sides, turning carefully.
  7. Remove from heat, allow to cool slightly, remove toothpicks if used, and serve warm.

Notes

These roll-ups can be made ahead and stored in the refrigerator for up to 3 days. Reheat in a skillet or oven for best texture. You can also add diced bell peppers or spinach for extra flavor and nutrition.
