- In a mixing bowl, whisk the eggs with salt and black pepper until well combined. Set aside.
- Heat a skillet over medium heat and cook the crumbled chicken or turkey sausage until browned and fully heated.
- Add the whisked eggs and chopped green onions to the skillet. Stir gently until the eggs are fluffy and fully cooked.
- Lay out a tortilla on a flat surface. Spoon the sausage and egg mixture onto one side and sprinkle evenly with shredded cheddar cheese.
- Roll the tortilla tightly around the filling. Secure with toothpicks if necessary.
- In the same skillet, add butter or oil over medium heat. Place the roll-ups seam-side down and cook until golden brown on all sides, turning carefully.
- Remove from heat, allow to cool slightly, remove toothpicks if used, and serve warm.
Notes
These roll-ups can be made ahead and stored in the refrigerator for up to 3 days. Reheat in a skillet or oven for best texture. You can also add diced bell peppers or spinach for extra flavor and nutrition.
