Ingredients
  

  • 1 large egg
  • 0.5 cup unsalted butter, melted
  • 0.25 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup light brown sugar, packed
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon, divided
  • 3 tablespoons granulated sugar (for topping)

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk melted butter and brown sugar until smooth. Add egg, honey, and vanilla; whisk until combined.
  3. Stir in flour, salt, and ½ teaspoon cinnamon until just combined. Do not overmix.
  4. Pour batter into prepared pan. Combine granulated sugar with remaining ½ teaspoon cinnamon and sprinkle over the top.
  5. Bake 22–25 minutes or until a toothpick inserted in center comes out clean. Cool completely before cutting into squares.

Notes

For extra cinnamon flavor, add a pinch of nutmeg or drizzle the cooled bars with a cinnamon glaze. Store blondies in an airtight container for up to 3 days at room temperature.
