Method
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
 - In a bowl, whisk melted butter and brown sugar until smooth. Add egg, honey, and vanilla; whisk until combined.
 - Stir in flour, salt, and ½ teaspoon cinnamon until just combined. Do not overmix.
 - Pour batter into prepared pan. Combine granulated sugar with remaining ½ teaspoon cinnamon and sprinkle over the top.
 - Bake 22–25 minutes or until a toothpick inserted in center comes out clean. Cool completely before cutting into squares.
 
Notes
For extra cinnamon flavor, add a pinch of nutmeg or drizzle the cooled bars with a cinnamon glaze. Store blondies in an airtight container for up to 3 days at room temperature.
