Fudgy Cottage Cheese Brownie Bites

Ingredients
  

  • 1 cup cottage cheese blended until smooth
  • 2 large eggs
  • 1/2 cup cocoa powder unsweetened
  • 1/3 cup honey or maple syrup
  • 1/2 cup oat flour or almond flour
  • 1/4 cup dark chocolate chips plus extra for topping
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • salt pinch

Method
 

  1. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  2. Blend cottage cheese until completely smooth.
  3. In a mixing bowl, whisk eggs, honey or maple syrup, and vanilla extract.
  4. Stir in the blended cottage cheese until combined.
  5. Add cocoa powder, flour, baking powder, and salt. Mix until smooth.
  6. Fold in dark chocolate chips.
  7. Spoon batter into mini muffin cups, filling about 3/4 full. Top with extra chocolate chips if desired.
  8. Bake for 12–15 minutes until set but still fudgy in the center.
  9. Cool slightly before removing from the pan. Serve warm or chilled.

Notes

Store brownie bites in an airtight container in the refrigerator for up to 5 days. These also freeze well for quick snacks.
