Method
- Preheat oven to 350°F (175°C) and grease a mini muffin tin.
- Blend cottage cheese until completely smooth.
- In a mixing bowl, whisk eggs, honey or maple syrup, and vanilla extract.
- Stir in the blended cottage cheese until combined.
- Add cocoa powder, flour, baking powder, and salt. Mix until smooth.
- Fold in dark chocolate chips.
- Spoon batter into mini muffin cups, filling about 3/4 full. Top with extra chocolate chips if desired.
- Bake for 12–15 minutes until set but still fudgy in the center.
- Cool slightly before removing from the pan. Serve warm or chilled.
Notes
Store brownie bites in an airtight container in the refrigerator for up to 5 days. These also freeze well for quick snacks.
