Ingredients
  

  • 6 bone-in, skin-on chicken thighs
  • 3 tbsp butter, melted
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme (or Italian seasoning)
  • 1 tbsp olive oil
  • salt and pepper, to taste
  • fresh parsley, for garnish

Method
 

  1. Preheat oven to 400°F. Line a baking dish with foil or parchment for easy cleanup.
  2. Pat chicken thighs dry with paper towels. In a small bowl, mix melted butter, garlic, paprika, thyme, olive oil, salt, and pepper. Brush mixture all over the chicken.
  3. Place chicken thighs skin-side up in the baking dish. Roast 35–40 minutes, or until chicken reaches 165°F and skin is golden and crispy.
  4. Remove from oven and let rest for 5 minutes.
  5. Sprinkle with fresh parsley and serve with mashed potatoes, rice, or roasted vegetables.

Notes

For extra crispy skin, broil for 2–3 minutes at the end of roasting. You can swap thyme for rosemary or oregano for variety. Always let chicken rest before serving to keep it juicy.
