- In a large skillet, heat olive oil over medium-high heat.
- Add diced chicken and minced garlic. Cook until chicken is browned.
- Stir in chicken broth, heavy cream, and gnocchi. Bring to a simmer.
- Cover and cook for 5–7 minutes, until gnocchi is cooked through.
- Stir in Parmesan cheese until melted. Season with salt and pepper.
- Garnish with chopped parsley before serving.
Notes
For extra veggies, add spinach or sun-dried tomatoes during the simmering step. You can swap Parmesan with Pecorino Romano for a sharper flavor. Serve immediately for best texture.
