  • 1 1/2 tsp baking soda
  • 1 tbsp ground cinnamon
  • 1 tbsp ground ginger
  • 1/2 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 3/4 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 cup molasses
  • 1/2 cup unsweetened applesauce
  • 1 cup hot water
  • 8 oz cream cheese, softened
  • 6 tbsp unsalted butter, softened
  • 1 pinch salt
  • 1 tsp vanilla extract
  • 2 1/2 cups powdered sugar

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×11-inch baking dish.
  2. In a medium bowl, whisk together the flour, salt, baking soda, cinnamon, ginger, cloves, and nutmeg. Set aside.
  3. Cream together the brown sugar and butter until light and fluffy. Add the egg, molasses, and applesauce, mixing until combined.
  4. Gradually add the flour mixture to the molasses mixture in four intervals, stirring until combined after each addition. Stir in the hot water until fully incorporated.
  5. Pour the batter into the prepared baking dish. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
  6. Beat softened cream cheese and butter until smooth. Add salt and vanilla extract. Gradually mix in powdered sugar until creamy.
  7. Spread frosting evenly over cooled cake. Store leftovers in the refrigerator.

Notes

For extra flavor, sprinkle cinnamon sugar on top of the frosting or garnish with candied ginger. This cake keeps best when stored in the refrigerator and served slightly chilled.
