  • 1 tsp baking powder
  • 0.375 tsp baking soda
  • 1 tsp cinnamon
  • 1.5 tsp ground ginger
  • 0.25 tsp ground cloves
  • 0.25 tsp salt
  • 0.25 cup canola oil or vegetable oil
  • 1 tsp pure vanilla extract
  • 1 tbsp apple cider vinegar or white vinegar
  • 0.25 cup unsulphured molasses
  • 1 cup water

Method
 

  1. Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with non-stick cooking spray to ensure easy removal of the cake after baking.
  2. In a small bowl or measuring cup, combine the water and molasses. Stir thoroughly until the molasses is fully dissolved. Set aside.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, and salt. Ensure even distribution of all dry ingredients.
  4. Using the back of a spoon, create three wells in the dry ingredients: two smaller wells and one larger well. Add vanilla extract to one small well, vinegar to the other small well, and oil to the large well.
  5. Pour the molasses-water mixture over the dry ingredients. Mix gently with a spatula or wooden spoon until smooth and fully incorporated. Avoid overmixing.
  6. Pour the batter into the prepared baking dish, spreading evenly. Bake on the middle rack for about 35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Remove from oven and allow to cool in the pan. Serve plain or top with powdered sugar, whipped cream, or glaze.

Notes

Try adding 2 tablespoons of hot coffee or espresso to deepen the flavor. This cake stays moist for several days at room temperature. For extra indulgence, top it with cream cheese frosting or a drizzle of lemon glaze.
