- Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with non-stick cooking spray to ensure easy removal of the cake after baking.
- In a small bowl or measuring cup, combine the water and molasses. Stir thoroughly until the molasses is fully dissolved. Set aside.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, and salt. Ensure even distribution of all dry ingredients.
- Using the back of a spoon, create three wells in the dry ingredients: two smaller wells and one larger well. Add vanilla extract to one small well, vinegar to the other small well, and oil to the large well.
- Pour the molasses-water mixture over the dry ingredients. Mix gently with a spatula or wooden spoon until smooth and fully incorporated. Avoid overmixing.
- Pour the batter into the prepared baking dish, spreading evenly. Bake on the middle rack for about 35 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from oven and allow to cool in the pan. Serve plain or top with powdered sugar, whipped cream, or glaze.
Notes
Try adding 2 tablespoons of hot coffee or espresso to deepen the flavor. This cake stays moist for several days at room temperature. For extra indulgence, top it with cream cheese frosting or a drizzle of lemon glaze.
