Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup chopped pecans
  • 1/2 cup pure maple syrup
  • 1/4 cup brown sugar (for filling)
  • 2 tbsp unsalted butter (for filling)
  • 1 tsp vanilla extract (for filling)
  • 1 large egg yolk, lightly beaten
  • 1 pinch salt (for filling)

Method
 

  1. In a saucepan, combine chopped pecans, maple syrup, brown sugar, butter, and a pinch of salt. Simmer over medium heat for 3–4 minutes, stirring constantly.
  2. Remove from heat and stir in vanilla extract and egg yolk. Let filling cool completely to thicken.
  3. Cream butter, brown sugar, and granulated sugar until light and fluffy. Beat in eggs and vanilla.
  4. Whisk flour, baking soda, baking powder, and salt. Gradually mix into wet ingredients until dough forms.
  5. Scoop 2 tablespoons of dough and flatten into discs. Place 1 teaspoon of filling in the center and top with another disc, sealing edges tightly.
  6. Bake at 350°F (175°C) for 12–14 minutes until edges are golden and centers are soft. Cool slightly before serving.

Notes

Be sure the maple pecan filling is completely cooled before assembling the cookies to prevent leaking. Sealing the edges well keeps the filling inside while baking.
