Ingredients
  

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the peanut butter, sugar, egg, and vanilla extract until smooth and well blended.
  3. Form the dough into walnut-sized balls.
  4. Place the balls on an ungreased cookie sheet, leaving space between each one.
  5. Using a fork, press down on each ball slightly, creating a criss-cross pattern on the top.
  6. Bake in the preheated oven for 8–10 minutes, or until golden brown.
  7. Let cookies cool on baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

For best results, do not overbake; the cookies will firm up as they cool. Add a pinch of salt if using unsalted peanut butter. These cookies freeze well and are naturally gluten-free since they contain no flour.
