Greek-Style Lemon Potatoes with Garlic and Oregano

Ingredients
  

  • 2 lb Yukon Gold potatoes
  • 1/4 cup extra virgin olive oil
  • 2 lemons juiced
  • 6 cloves garlic smashed
  • 1 tablespoon dried oregano
  • salt to taste
  • black pepper to taste

Method
 

  1. Preheat the oven to 425°F (220°C) and lightly grease a large baking dish.
  2. Wash and peel the Yukon Gold potatoes, then cut them into evenly sized wedges.
  3. In a mixing bowl, whisk together the olive oil, lemon juice, smashed garlic, dried oregano, salt, and pepper.
  4. Add the potato wedges to the bowl and toss until they are thoroughly coated in the lemon-garlic mixture.
  5. Spread the potatoes in a single layer in the prepared baking dish.
  6. Roast for about 45 minutes, flipping halfway through, until the potatoes are golden brown and tender.
  7. Serve warm, garnished with fresh parsley if desired.

Notes

For extra crispiness, avoid overcrowding the pan. These potatoes are excellent served alongside grilled chicken, fish, or roasted vegetables.
