Ingredients
  

  • 1/2 cup Greek yogurt plain or vanilla
  • 2 tbsp peanut butter or almond butter
  • 1 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup oat flour or almond flour
  • 1 tbsp mini chocolate chips

Method
 

  1. In a medium bowl, stir together the Greek yogurt, nut butter, honey, and vanilla extract until smooth.
  2. Add the oat flour and mix until the dough thickens and resembles soft cookie dough.
  3. Fold in the mini chocolate chips.
  4. Taste and adjust sweetness if needed. Chill for 10–15 minutes for a firmer texture, if desired.
  5. Scoop and enjoy immediately or store covered in the refrigerator.

Notes

This cookie dough is meant to be eaten as-is and not baked. For extra flavor, add a pinch of salt or swap chocolate chips for cacao nibs.
