- In a medium bowl, stir together the Greek yogurt, nut butter, honey, and vanilla extract until smooth.
- Add the oat flour and mix until the dough thickens and resembles soft cookie dough.
- Fold in the mini chocolate chips.
- Taste and adjust sweetness if needed. Chill for 10–15 minutes for a firmer texture, if desired.
- Scoop and enjoy immediately or store covered in the refrigerator.
Notes
This cookie dough is meant to be eaten as-is and not baked. For extra flavor, add a pinch of salt or swap chocolate chips for cacao nibs.
