Ingredients
  

  • 1 pound (450g) ground beef
  • 1 onion, chopped
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1 can (5 oz) chow mein noodles
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1/2 cup (120ml) water
  • 1/4 cup (60ml) soy sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, cook ground beef and onion until beef is browned; drain.
  3. Stir in cream of mushroom soup, diced tomatoes, water, soy sauce, garlic powder, and pepper.
  4. Simmer for 5 minutes.
  5. Place half of the chow mein noodles in a greased 2-quart casserole dish.
  6. Top with half of the beef mixture.
  7. Repeat layers.
  8. Bake, uncovered, for 25-30 minutes or until heated through.

Notes

You can swap ground beef with ground turkey or chicken. For extra veggies, stir in a cup of frozen peas or bell peppers before baking. Top with shredded cheddar cheese for a richer version.
