- Preheat oven to 350°F (175°C).
- In a skillet, cook ground beef and onion until beef is browned; drain.
- Stir in cream of mushroom soup, diced tomatoes, water, soy sauce, garlic powder, and pepper.
- Simmer for 5 minutes.
- Place half of the chow mein noodles in a greased 2-quart casserole dish.
- Top with half of the beef mixture.
- Repeat layers.
- Bake, uncovered, for 25-30 minutes or until heated through.
Notes
You can swap ground beef with ground turkey or chicken. For extra veggies, stir in a cup of frozen peas or bell peppers before baking. Top with shredded cheddar cheese for a richer version.
