Ingredients
  

  • 1 lb lean ground beef
  • 2 medium zucchini, sliced
  • 2 medium sweet potatoes, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • salt and black pepper, to taste

Method
 

  1. Peel and dice the sweet potatoes into bite-sized cubes. Slice the zucchini and dice the onion.
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté for 3–4 minutes until fragrant and translucent.
  3. Add ground beef to the skillet and cook for 5–7 minutes, breaking it up, until browned.
  4. Stir in sweet potatoes, paprika, cumin, salt, and pepper. Cover and cook for about 10 minutes until potatoes begin to soften.
  5. Add zucchini slices and cook uncovered for 5 minutes until tender and heated through.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

Dice sweet potatoes evenly so they cook at the same rate. Covering the skillet helps soften the potatoes faster. Add a splash of broth if the pan gets too dry.
