- Peel and dice the sweet potatoes into bite-sized cubes. Slice the zucchini and dice the onion.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté for 3–4 minutes until fragrant and translucent.
- Add ground beef to the skillet and cook for 5–7 minutes, breaking it up, until browned.
- Stir in sweet potatoes, paprika, cumin, salt, and pepper. Cover and cook for about 10 minutes until potatoes begin to soften.
- Add zucchini slices and cook uncovered for 5 minutes until tender and heated through.
- Serve hot, garnished with fresh herbs if desired.
Notes
Dice sweet potatoes evenly so they cook at the same rate. Covering the skillet helps soften the potatoes faster. Add a splash of broth if the pan gets too dry.
