Ingredients
  

  • 1 cup natural peanut butter creamy, no added sugar
  • 1/2 cup Greek yogurt plain, unsweetened
  • 1/4 cup honey or maple syrup
  • 1 cup rolled oats old-fashioned oats
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, stir together peanut butter, Greek yogurt, and honey or maple syrup until smooth and well combined.
  3. Add rolled oats, baking soda, vanilla extract, and salt. Mix until a thick dough forms.
  4. Fold in dark chocolate chips if using.
  5. Scoop dough onto the prepared baking sheet and gently flatten each cookie.
  6. Bake for 10–12 minutes, until edges are set and centers are soft.
  7. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra texture, add chopped nuts or shredded coconut. Cookies will be soft and tender rather than crispy.
