Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, stir together peanut butter, Greek yogurt, and honey or maple syrup until smooth and well combined.
- Add rolled oats, baking soda, vanilla extract, and salt. Mix until a thick dough forms.
- Fold in dark chocolate chips if using.
- Scoop dough onto the prepared baking sheet and gently flatten each cookie.
- Bake for 10–12 minutes, until edges are set and centers are soft.
- Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra texture, add chopped nuts or shredded coconut. Cookies will be soft and tender rather than crispy.
