Ingredients
  

  • 2 pounds ground beef
  • 4 Yukon Gold potatoes, peeled and cubed
  • 2 cans mixed vegetables (with liquid)
  • 1 can sweet corn (with liquid)
  • 1 can condensed tomato soup
  • 1 can petite diced tomatoes
  • 1 can cut green beans (with liquid)
  • 1–2 tsp salt (to taste)
  • ½ tsp black pepper
  • 2 tbsp sugar

Method
 

  1. Peel and dice the Yukon Gold potatoes into small, even cubes for even cooking.
  2. In a skillet over medium heat, cook the ground beef until fully browned. Drain excess fat.
  3. Add the cooked beef and cubed potatoes to your slow cooker.
  4. Pour in the mixed vegetables, corn, tomato soup, diced tomatoes, and green beans—liquid and all.
  5. Add salt, pepper, and sugar. Mix everything together until evenly combined.
  6. Cover and cook on low heat for 2–3 hours, or until potatoes are fork-tender.
  7. Season again to taste before serving hot.

Notes

For a thicker texture, mash a few potatoes directly in the slow cooker before serving. Add a dash of Worcestershire sauce or smoked paprika for extra depth. Serve with cornbread or crackers for a full family comfort food experience.
