- Peel and dice the Yukon Gold potatoes into small, even cubes for even cooking.
 - In a skillet over medium heat, cook the ground beef until fully browned. Drain excess fat.
 - Add the cooked beef and cubed potatoes to your slow cooker.
 - Pour in the mixed vegetables, corn, tomato soup, diced tomatoes, and green beans—liquid and all.
 - Add salt, pepper, and sugar. Mix everything together until evenly combined.
 - Cover and cook on low heat for 2–3 hours, or until potatoes are fork-tender.
 - Season again to taste before serving hot.
 
Notes
For a thicker texture, mash a few potatoes directly in the slow cooker before serving. Add a dash of Worcestershire sauce or smoked paprika for extra depth. Serve with cornbread or crackers for a full family comfort food experience.
