Ingredients
  

  • 1 lb ground beef (80/20)
  • 8 oz egg noodles
  • 1 can cream of mushroom soup (10.5 oz)
  • 2 cups sharp cheddar cheese, shredded
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups frozen mixed vegetables
  • salt and pepper, to taste

Method
 

  1. Preheat oven to 350°F (175°C). Cook egg noodles until al dente, drain, and set aside.
  2. Sauté chopped onion in a skillet until translucent. Add garlic and cook until fragrant.
  3. Add ground beef and cook until browned, breaking it apart as it cooks.
  4. Stir in cream of mushroom soup, frozen vegetables, salt, and pepper. Mix in cooked noodles.
  5. Layer half the mixture in a greased baking dish, sprinkle with half the cheese, add remaining mixture, then top with remaining cheese.
  6. Cover with foil and bake 25 minutes. Uncover and bake 10 more minutes until bubbly and golden.

Notes

Swap cream of mushroom with cream of chicken if preferred. Let rest 5 minutes before serving for cleaner slices.
