Hobo Casserole

Ingredients
  

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 2 cups carrots, sliced
  • 1 medium onion, chopped
  • 1 can (14.5 oz) diced tomatoes with juice
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup shredded cheese (cheddar or your choice)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a spatula as it cooks. Drain any excess fat.
  3. Add the chopped onions and sliced carrots to the skillet with the ground beef. Sauté for about 5 minutes until the onions are translucent and the carrots begin to soften.
  4. Stir in the diced potatoes, canned tomatoes (with their juice), Worcestershire sauce, salt, and black pepper. Mix well to combine all the ingredients.
  5. Transfer the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  7. After 45 minutes, remove the foil and sprinkle the shredded cheese evenly over the top of the casserole. Return the dish to the oven and bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
  8. Once done, remove from the oven and let it sit for about 5 minutes before serving.
  9. Serve the Hobo Casserole warm, garnished with fresh herbs if desired.

Notes

You can add green beans or corn for extra veggies, or swap cheddar with mozzarella for a different flavor. For extra seasoning, try adding garlic powder or smoked paprika.
