Ingredients
  

  • 1 box Jiffy Cornbread Mix
  • 1/2 small onion, grated
  • 1/2 cup buttermilk
  • 1 large egg, beaten
  • 1/4 cup panko bread crumbs
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp baking powder
  • oil, for frying

Method
 

  1. In a large bowl, combine the Jiffy Cornbread Mix, grated onion, buttermilk, beaten egg, panko bread crumbs, all-purpose flour, salt, black pepper, and baking powder. Mix until just combined.
  2. Heat oil in a deep fryer or large pot to 350°F (175°C).
  3. Using a spoon or small cookie scoop, carefully drop spoonfuls of the batter into the hot oil.
  4. Fry the hush puppies in batches, turning occasionally, until golden brown and cooked through, about 3–4 minutes per batch.
  5. Remove with a slotted spoon and drain on paper towels.
  6. Serve warm as a delicious side or snack.

Notes

Serve with tartar sauce, honey butter, or spicy mayo for dipping. For extra flavor, stir in chopped jalapeños, green onions, or shredded cheese before frying. Best enjoyed fresh and hot.
