- Preheat oven to 350°F (175°C). Combine pistachios, graham cracker crumbs, and melted butter. Press firmly into the bottom of a springform pan.
- Beat cream cheese, sugar, and vanilla until smooth and creamy.
- Add eggs one at a time, mixing well after each addition.
- Pour batter over prepared crust and bake for 45–50 minutes until center is just set.
- Cool completely, then refrigerate for at least 4 hours.
- Before serving, drizzle with honey, sprinkle chopped baklava on top, and add whipped cream dollops.
Notes
For best texture, chill overnight before serving. Toast pistachios lightly beforehand for deeper flavor.
