Ingredients
  

Cheesecake Batter
  • 16 oz full-fat cream cheese room temperature
  • 3/4 cup granulated sugar
  • 3 large eggs room temperature
  • 1 cup heavy cream lighter cream may be substituted
  • 1/4 cup all-purpose flour gluten-free alternatives work
  • 1/4 teaspoon salt
Optional Toppings
  • 1 cup whipped cream for serving
  • 1 cup fresh berries for serving
  • 1/2 cup caramel sauce for drizzling

Method
 

  1. Preheat the oven to 400°F (200°C). Grease and line a 9x5-inch loaf pan with parchment paper.
  2. In a large mixing bowl, beat the cream cheese and granulated sugar until completely smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Fold in the heavy cream, flour, and salt until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for about 45 minutes, until the top is deeply golden brown and the center still has a slight jiggle.
  7. Allow the cheesecake to cool completely at room temperature.
  8. Transfer to the refrigerator and chill for at least 4 hours, preferably overnight.
  9. Slice and serve with whipped cream, fresh berries, or caramel sauce if desired.

Notes

The center will firm up as it chills while staying creamy. For clean slices, wipe the knife between cuts.
