Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter (melted)
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup diced apples (about 1 medium apple)
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons pure maple syrup (for glaze)
  • 1 tablespoon unsalted butter, melted (for glaze)
  • 1/4 teaspoon vanilla extract (for glaze)

Equipment

  • Mixing bowls
  • Whisk
  • Spatula
  • 9x9-inch baking pan
  • Parchment paper
  • Oven

Method

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch square baking pan with parchment paper or grease it well.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
  3. In another large bowl, whisk the melted butter and brown sugar until smooth. Add the eggs and vanilla extract and mix until fully combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing to keep the blondies tender.
  5. Fold in the diced apples with a spatula, spreading them evenly through the batter.
  6. Pour the batter into the prepared pan and smooth the surface with a spatula.
  7. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs.
  8. While the blondies cool for 10 minutes, prepare the maple glaze by whisking together powdered sugar, maple syrup, melted butter, and vanilla extract until smooth.
  9. Drizzle the glaze evenly over the warm blondies.
  10. Let the glaze set for a few minutes, then slice into squares and enjoy!

Notes

For a richer maple flavor, use dark maple syrup in the glaze. Add chopped walnuts or pecans for crunch. These blondies store well in an airtight container for up to 3 days at room temperature.
