- In a large bowl, combine ranch dressing, olive oil, garlic, Parmesan, ranch seasoning, paprika, salt, and pepper. Mix well.
- Add chicken cubes to the marinade, coating evenly. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
- Preheat grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 20 minutes.
- Thread chicken onto skewers. Grill for 10–12 minutes, turning occasionally and basting with melted butter, until golden and cooked through.
- Sprinkle with extra Parmesan and fresh parsley before serving.
Notes
For best flavor, let the chicken marinate at least 2 hours. Serve with grilled vegetables, rice, or a fresh salad. Wooden skewers should be soaked in water to prevent burning.
