Juicy Ranch Garlic Parmesan Chicken Skewers

These grilled chicken skewers are marinated in ranch, garlic, Parmesan, and spices, then basted with melted butter for a juicy, flavorful summer dish.

Ingredients
  

  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/3 cup ranch dressing
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp ranch seasoning mix
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp unsalted butter, melted (for basting)
  • fresh parsley, chopped (for garnish)

Method
 

  1. In a large bowl, combine ranch dressing, olive oil, garlic, Parmesan, ranch seasoning, paprika, salt, and pepper. Mix well.
  2. Add chicken cubes to the marinade, coating evenly. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
  3. Preheat grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 20 minutes.
  4. Thread chicken onto skewers. Grill for 10–12 minutes, turning occasionally and basting with melted butter, until golden and cooked through.
  5. Sprinkle with extra Parmesan and fresh parsley before serving.

Notes

For best flavor, let the chicken marinate at least 2 hours. Serve with grilled vegetables, rice, or a fresh salad. Wooden skewers should be soaked in water to prevent burning.
