Kentucky Derby Bars

Ingredients
  

Crust
  • 2 cups all-purpose flour
  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter (softened)
Filling
  • 1 cup brown sugar (packed)
  • 1 cup dark corn syrup
  • 1/2 cup butter (melted)
  • 4 large eggs
  • 2 cups chopped pecans
  • 1 cup semisweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Line a 13×9-inch baking pan with aluminum foil and spray with nonstick cooking spray.
  2. In a large bowl, whisk together flour, confectioners' sugar, and salt. Cut in softened butter until the mixture resembles coarse crumbs.
  3. Press the crust mixture firmly into the bottom of the prepared pan and bake for 15 to 18 minutes or until lightly browned.
  4. In another bowl, combine brown sugar, dark corn syrup, melted butter, eggs, pecans, and chocolate chips; mix well.
  5. Pour the filling over the baked crust and return to the oven for 30 to 35 minutes or until set.
  6. Allow the bars to cool completely before slicing into squares.

Notes

For a slightly less sweet version, reduce chocolate chips to 3/4 cup or use bittersweet chocolate. Store bars chilled for cleaner slices.
