- Preheat oven to 350°F (175°C). Place butter in a 9×9-inch baking dish and melt it in the oven.
- In a mixing bowl, combine flour, 1 cup of sugar, baking powder, and salt. Stir well.
- Add milk, lemon juice, and lemon zest. Mix until smooth.
- Pour batter over melted butter in baking dish. Do not stir.
- Sprinkle remaining 1/2 cup sugar evenly on top of batter.
- Carefully pour hot water over the batter. Do not stir.
- Bake for 40-45 minutes until golden brown and set. The cobbler will form a gooey lemony base.
- Cool slightly before serving. Enjoy warm with whipped cream or vanilla ice cream.
Notes
Best enjoyed fresh out of the oven while still warm. For extra flavor, try adding a splash of vanilla extract to the batter. Store leftovers covered in the fridge for up to 3 days and reheat gently before serving.
