Magic Lemon Cobbler Delight

Ingredients
  

  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 1/2 cups granulated sugar, divided
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1/4 cup lemon juice
  • 1 zest of 1 lemon
  • 2 cups hot water

Method
 

  1. Preheat oven to 350°F (175°C). Place butter in a 9×9-inch baking dish and melt it in the oven.
  2. In a mixing bowl, combine flour, 1 cup of sugar, baking powder, and salt. Stir well.
  3. Add milk, lemon juice, and lemon zest. Mix until smooth.
  4. Pour batter over melted butter in baking dish. Do not stir.
  5. Sprinkle remaining 1/2 cup sugar evenly on top of batter.
  6. Carefully pour hot water over the batter. Do not stir.
  7. Bake for 40-45 minutes until golden brown and set. The cobbler will form a gooey lemony base.
  8. Cool slightly before serving. Enjoy warm with whipped cream or vanilla ice cream.

Notes

Best enjoyed fresh out of the oven while still warm. For extra flavor, try adding a splash of vanilla extract to the batter. Store leftovers covered in the fridge for up to 3 days and reheat gently before serving.
