  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup maple syrup
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for icing)
  • 2 tbsp maple syrup (for icing)
  • 1 tbsp milk (for icing)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add the maple syrup and vanilla extract, mixing well.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Pour the batter into the prepared baking pan and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for about 10 minutes before transferring to a wire rack.
  8. In a small bowl, whisk together the powdered sugar, maple syrup, and milk until smooth. Drizzle over the cooled cake before serving.

Notes

For extra flavor, add chopped pecans or walnuts to the batter. You can also swap the maple syrup for honey or top with cream cheese frosting for a richer version.
