Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup maraschino cherries, drained and chopped
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then mix in vanilla extract.
  4. Whisk flour, baking soda, and salt together. Gradually mix into wet ingredients.
  5. Gently fold in chopped maraschino cherries and chocolate chips.
  6. Drop rounded spoonfuls onto baking sheets and bake for 10–12 minutes until edges are lightly golden.
  7. Cool on baking sheets for a few minutes, then transfer to wire racks to cool completely.

Notes

Drain cherries very well to prevent excess moisture. For dairy-free cookies, use vegan butter and dairy-free chocolate chips.
