Marry Me Chicken Pasta

Ingredients
  

  • 2 large chicken breasts, cut into strips
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 300 g pasta (penne, rigatoni, or fettuccine)
  • Fresh basil or parsley, chopped (for garnish)

Method
 

  1. Cook pasta according to package directions, drain, and set aside.
  2. In a skillet, heat olive oil over medium-high. Season chicken with salt and pepper, then sear until golden and cooked through. Remove and set aside.
  3. In the same pan, sauté garlic for 1 minute. Stir in heavy cream, chicken broth, parmesan, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Simmer until thickened.
  4. Return chicken to the skillet and coat with the creamy sauce.
  5. Toss in cooked pasta until well combined.
  6. Garnish with fresh basil or parsley before serving.

Notes

Swap chicken breasts for thighs if you prefer richer flavor. You can use half-and-half instead of heavy cream for a lighter version. Add spinach for extra greens.
