Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 tsp chili powder
  • salt and pepper, to taste
  • 1 tbsp olive oil or vegetable oil
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika (optional)
  • salt and pepper, to taste

Method
 

  1. Season chicken breasts evenly with chili powder, salt, and pepper.
  2. Heat oil in a skillet or grill pan over medium-high heat. Cook chicken for 6–7 minutes per side until fully cooked and lightly charred. Remove and keep warm.
  3. In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1–2 minutes until lightly golden.
  4. Slowly whisk in milk and cook 3–5 minutes until thickened.
  5. Remove from heat and stir in cheddar cheese, garlic powder, smoked paprika, salt, and pepper until smooth.
  6. Place chicken on plates and spoon warm cheese sauce generously over the top. Serve immediately.

Notes

Serve with rice, roasted vegetables, or warm tortillas. Smoked paprika adds depth, but can be omitted if unavailable.
