Ingredients
  

  • 3 cups cooked shredded chicken (rotisserie works great)
  • 8 oz cream cheese, softened
  • 0.5 cup sour cream
  • 1 cup shredded cheddar cheese
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • salt and black pepper to taste
  • 1 sleeve Ritz crackers, crushed
  • 0.25 cup melted butter
  • fresh parsley for garnish (optional)

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 baking dish.
  2. In a large bowl, mix the shredded chicken, cream cheese, sour cream, cheddar cheese, garlic powder, onion powder, salt, and pepper until fully combined.
  3. Spread the mixture evenly into the prepared baking dish.
  4. In a separate bowl, combine the crushed Ritz crackers and melted butter. Sprinkle the mixture evenly over the casserole.
  5. Bake uncovered for 30–35 minutes or until the top is golden and the casserole is hot and bubbly.
  6. Let cool for 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

Rotisserie chicken saves time and adds extra flavor. You can also use crushed cornflakes or panko for a different topping texture. For a pop of color, mix in steamed broccoli or spinach before baking.
