Method
- Prepare your workspace by gathering all ingredients and lining a baking sheet with parchment paper.
- In a heatproof bowl, combine the chocolate chips and sweetened condensed milk.
- Place the bowl over a pot of gently simmering water to create a double boiler. Stir until the chocolate is fully melted and smooth. Remove from heat and let cool slightly.
- Stir in the dried coconut and graham cracker crumbs until the mixture is thick and well combined.
- Add the melted butter and vanilla extract, mixing until fully incorporated.
- Using clean hands, scoop small portions and roll into bite-sized balls.
- Roll each ball in the additional graham cracker crumbs until fully coated.
- Place the coated balls on the prepared baking sheet and refrigerate for at least 30 minutes, or until firm.
- Serve chilled and enjoy.
Notes
These no-bake treats keep well in an airtight container in the refrigerator for up to one week. For variation, roll them in cocoa powder or shredded coconut instead of graham crumbs.
