- In a heatproof bowl over simmering water, melt chocolate chips with condensed milk, stirring until smooth. Remove from heat and cool slightly.
- Stir in dried coconut and graham cracker crumbs until thick and evenly combined.
- Mix in melted butter and vanilla extract until fully incorporated.
- Scoop mixture and roll into bite-sized balls. Roll each ball in extra graham crumbs to coat.
- Place balls on a parchment-lined tray and refrigerate for at least 30 minutes until firm.
